Yesterday we had white bean pancakes. It was quite the hit. SO Yummy.

WHITE BEAN PANCAKES
INGREDIENTS:
• One 15-ounce can white beans, rinsed + drained. We love white navy beans or cannellini beans for this recipe.
• 1 cup of any type of milk or dairy substitute of your choice
• 2 large eggs
• 1 cup pancake mix. We used the Aldi brand pancake mix.
• 2-3 Tablespoon of ground flax seed, optional for extra fiber
• 1 teaspoon vanilla extract
DIRECTIONS:
1. Add the beans, milk, eggs, and vanilla, to a blender. Blend this mixture until it is smooth.
2. Add vanilla extract, pancake mix, and the flax seed here and mix.
3. Add the butter to a large skillet over medium heat. Once the pan is hot, pour the batter onto the pan. One pancake should be about 4 inches in diameter. Cook the batter until bubbles start to pop on the surface. Then flip the pancake and cook it until the other side is also brown and the edges are dry—about 3 to 5 minutes per side. You can serve with any toppings: extra butter, syrup, fruit, or whatever you like!

Don't forget the OPEN HOUSE for the Postpartum group led by Anazao will be at the Wayne County Health Department Today at 1pm-3pm. We look forward to seeing you there. Pregnant and Postpartum moms are welcome. You do not need to be a WIC participant and this event is free.

A balanced lunch helps kiddos energy and focus! Try these tips for a healthy lunch:
o Start with a fresh fruit. Ex. Banana, apple slices, berries.
o Pick two veggies. Ex. Carrot and cucumber sticks.
