Cheesy Beef Stuffed Potato Cakes
Ingredients:
4 large potatoes, peeled and grated
1 pound ground beef
1 cup shredded cheddar cheese
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon paprika
Salt and pepper to taste
Olive oil for frying
Directions:
In a bowl, mix grated potatoes with salt. Squeeze out excess moisture.
Heat olive oil in a pan and form potato patties, frying until golden brown. Set aside.
In the same pan, cook ground beef until browned. Add onions, garlic, paprika, salt, and pepper. Cook until onions are translucent.
Place a spoonful of the beef mixture on a potato patty, top with shredded cheese, and cover with another patty, sealing the edges.
Fry the stuffed potato cakes until crispy and golden on both sides.
Serve hot and enjoy the cheesy, beefy goodness!

Garlic Mushroom Grilled Cheese

Gourmet Grilled Cheese with Garlic Mushrooms and Thyme

Ingredients:

8 slices of sourdough bread
1 lb (450g) mushrooms, thinly sliced
4 cloves garlic, minced
2 tablespoons fresh thyme leaves
8 slices of Swiss cheese
4 tablespoons butter, at room temperature
Salt and pepper to taste
Directions:

In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced mushrooms, garlic, and thyme. Season with salt and pepper. Cook for 5-7 minutes until the mushrooms are golden and soft. Remove from heat and set aside.
Butter one side of each slice of bread. On the non-buttered side, place a slice of Swiss cheese, followed by an even layer of the mushroom mixture, and top with another slice of cheese. Cover with another slice of bread, buttered side up.
Heat a clean skillet over medium heat. Place the sandwiches in the skillet, pressing them down slightly. Cook for 3-4 minutes on each side, until the bread is crispy and golden brown and the cheese has melted.
Cut the sandwiches in half and serve immediately.

Pizza Bombs
Ingredients
▢1 can (8-count) Southern Homestyle buttermilk biscuits, not flaky
▢1 cup (257 g) pizza sauce, divided
▢½ cup (69 g) mini pepperoni slices, divided
▢4 ounces mozzarella cheese, cut into 16 equal-sized cubes, divided
Garlic Butter
▢¼ cup (½ stick / 57 g) unsalted butter, melted
▢¼ teaspoon garlic salt
▢¼ teaspoon Italian seasoning
▢2 tablespoons parmesan cheese, grated
Instructions
Pizza Bombs
Preheat the oven to 375°F and spray a 12-inch, oven-safe skillet with nonstick spray. (You could also use a greased baking dish, but the cooking time may vary.)
Remove the biscuits from the can and place them on a clean work surface. Using a rolling pin, flatten each biscuit to about ⅛-inch thickness.
Top each biscuit with 1 tablespoon of pizza sauce, 1 tablespoon pepperoni slices, and 2 cubes of mozzarella cheese.
Fold the edges of the biscuit together, pinching them tightly so there are no holes or gaps. Place the bomb seam side down into the prepared skillet. Repeat with the remaining bombs.
Bake for 20-22 minutes, or until the biscuits are golden brown.
Garlic Butter
In a small bowl, mix together the melted butter, garlic salt, Italian seasoning, and parmesan cheese.
After removing the pizza bombs from the oven, brush the garlic butter mixture over the top.
Serve with the remaining pizza sauce for dipping. Enjoy!

Grilled Cheese with Gouda, Roasted Mushrooms and Onions

Ingredients

8 ounces mushrooms, sliced
1 medium onion, sliced (the sweeter the better)
2 tablespoons olive oil
salt and pepper
4 tablespoons butter
4 slices bread of choice
1 cup gouda, shredded

Instructions

Preheat oven to 400-degrees F.
On a baking sheet toss sliced mushrooms and onion in olive oil. Sprinkle with a few pinches of salt and pepper. Bake in oven for about 20 minutes, or until roasted to preference.
In a skillet stove top, melt 4 tablespoons butter over medium heat.
While butter is melting, assemble sandwiches. On one slice of bread, layer shredded gouda, the roasted mushrooms and onions, then more gouda. (Layering this way ensures that the melty cheese will hold the sandwich together.) Salt and pepper to taste. Top with the other slice of bread. Lightly press together.
In the melted butter place one sandwich down for one second, then gently flip it over to the other side. Repeat with other sandwich. Cook for about 2 minutes, until lightly browned, then gently flip sandwich on other side, and cook for an additional 2-3 minutes, or until cheese is melted and sandwich is browned to preference.

Dump and Bake Meatball Casserole

Ingredients:

1 (16 oz) package uncooked penne pasta
1 (24 oz) jar marinara sauce
1 (14.5 oz) can diced tomatoes, undrained
2 cups water
1 (20 oz) package frozen meatballs
2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Fresh basil leaves, for garnish (optional)
Directions:

Preheat oven to 425°F (220°C). Grease a 9x13 inch baking dish.
In the baking dish, combine uncooked penne pasta, marinara sauce, diced tomatoes with their juice, and water. Stir until well mixed.
Add the frozen meatballs to the dish, distributing them evenly throughout the pasta.
Cover the dish tightly with aluminum foil and bake in the preheated oven for 35 minutes.
Remove the foil and stir the casserole. Sprinkle both mozzarella and Parmesan cheeses over the top, then sprinkle with Italian seasoning.
Return to the oven, uncovered, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the pasta is cooked through.
Let the casserole stand for 5 minutes before serving. Garnish with fresh basil leaves if desired.
