Oh no I’m Out Of . . . Try these handy substitutions if you find yourself short while baking for the holidays.
Baking Powder: For one teaspoon of baking powder, use ¼ teaspoon baking soda plus ½ teaspoon cream of tartar.
Cream of tartar: Cream of tartar is an organic acid found naturally in many plants and is also formed during the winemaking process. It helps stabilize whipped egg whites, prevents sugar from crystallizing, and acts as a leavening agent for baked goods. Several substitutes will work, including: lemon juice, white vinegar, baking powder, buttermilk, and yogurt. Google for specifics based on your particular application.
Baking Soda: For one teaspoon of baking soda, use 4 teaspoons of baking powder.
Eggs: Swap ¼ cup of any of the following for one egg when baking - vegetable oil, mashed banana, or unsweetened applesauce.
Egg Whites: For each egg white, use two tablespoons of aquafaba. Aquafaba?! It’s the liquid from a can of chickpeas (really!), which will whip to a meringue-like consistency. You can use it to make meringues or other fluffy baked goods that need whipped egg whites.
White Wine: Shame on you! But chicken broth or white wine vinegar will do only when cooking.
Sherry: Substitute apple cider vinegar or wine vinegar.
