Nihit was the kind of person who made the food bank feel like a true community. His warmth, kindness, and goofy sense of humor brought joy to so many people, especially within the tight-knit Tuesday evening volunteer crew. Whether welcoming new volunteers or laughing over some silly joke, Nihit made people feel included and cared for. He will be deeply missed by all of us at the University District Food Bank. 💛

Did you know this summer marks 10 years in our "new" Food Bank building?! Time certainly flies.

When we moved into this space in 2016 we didn't know how we could possibly fill it up... Cut to 10 years later--a pandemic, government cuts and other hurdles have increased our demand beyond what we ever thought possible and pushed us to our physical and financial limits.

We are now focused on how to add more cold storage, raise more funds, and grow our team to support continued growth in demand.

We are happy to share that we have four new team members coming on to support our growing operations, which will enable us to reopen on Fridays, as well as add additional services to support our community. We pay a living wage and offer benefits for our employees which allows us to grow with a strong, committed team.

With a 10-year-old building comes upkeep like fixing locks, replacing windows, and unfortunately repairing vandalization to our rooftop garden recently. We're adding latches on both sides of the doors that leads to the rooftop to avoid this moving forward and ensure safety for our team.

As operating costs continue to go up and we face challenges, we are comforted by this incredible community that showed up for us on GiveBig, raising $123,000 for our food budget!!

We are constantly blown away by your philanthropy and generosity to help us meet gaps in our budgets and feed NE Seattle together!

Last month we highlighted Dan and Susan's excellent work establishing our Farmers Market food rescue program. But where does all that great produce go?

We caught up with Tyler from our Apple-A-Day Cafe to learn more.

How do you and Arra repurpose some of the donated rescue produce to create delicious, free hot meals for our community?
We end up with a good amount of dino kale, mushrooms and chard and we use all of them in our vegan soups available on Tuesdays.

Tell us how you make it?
We start by making a stock from scratch and add diced vegetables - dicing all ingredients to a small enough size that more than one ingredient fits on the spoon is an important part of the process.

Vegan Soup Recipe:
Veggie Stock
Yellow or White Onion
Celery
Tomatoes
Carrots
Boil all ingredients, then simmer and strain.

Next gather a variety of vegetables like cauliflower, zucchini, yellow squash, potatoes, and carrots to roast in the oven or sauté in canola oil (we choose canola over vegetable oil to keep common allergens like soy out of the mix). Dice all vegetables to a small enough size that more than one ingredient fits on the spoon.

Make a slurry of seasonings with oil starting with salt, black pepper and garlic. Those are the holy trinity in our cooking. Toss veggies to season before roasting or sautéing.

Next dice onion and mushrooms and sauté in oil prior to adding to the soup base. For the chard and kale we add to the soup during the last 10–15 minutes of cooking to preserve its texture, color, and nutrients.

Every soup served at the Apple A Day Café reflects the creativity and adaptability of our kitchen team. Using the ingredients available each day, they craft meals that are comforting, flavorful, and thoughtfully prepared — an art form as much as a science.

Meet Matilda and Ani, two of our amazing AmeriCorps team members! 🧡

Together, they help support food access across our community through satellite pantry operations, grocery rescue, food recovery, and Home Delivery services.

Matilda serves as our Satellite Pantry & Food Rescue Assistant, helping run our North Seattle College and Mercy Magnuson Housing satellite pantries while also supporting grocery rescue and countless behind-the-scenes logistics that keep things moving each week.

Ani serves as our Home Delivery Assistant, helping ensure neighbors can access food even when getting to the pantry isn’t possible.

When asked what they find most fulfilling about their work, both spoke about the importance of connection and helping others in meaningful ways.

For Matilda, it’s building relationships with volunteers, partners, and customers:
“I genuinely look forward to seeing all of their faces and hearing their updates every Tuesday at North Seattle College.”

For Ani, it’s the small moments of care:
“Whether that is chatting with someone about their day or being able to give someone a food item that they have been looking for.”

Outside of work, Matilda loves exploring Seattle favorites like Pike Place Market and Carkeek Park, while Ani enjoys visiting the Washington Park Arboretum.

We are so grateful for the energy, compassion, and dedication they bring to UDFB every day. 💛

When kids don’t have access to school meals during the summer, SUN Bucks provides families with $120 per eligible child to buy groceries!

Most children are automatically enrolled, but you can submit an application if you are unsure about eligibility.

Families will receive a SUN Bucks card in the mail that can be used just like SNAP to purchase groceries anywhere EBT is accepted.

Thank you for filling all those blue bags for Stamp Out Hunger this weekend! 💙📬

We were thrilled to receive 10 Gaylords full of donated food from the U District and Wedgwood Post Offices, all headed back into our community to help stock our shelves for the busy week ahead.

Fun fact: a “Gaylord” is the warehouse term for those giant pallet-sized cardboard bins used to move large quantities of food and supplies. 📦

Thank you to and BECU for coming together in support of the U District Food Bank during UW’s annual Better Together Service Day with BECU. Volunteers helped repackage food and tackle other projects to prepare for another busy week serving our community.
