Honey Oat Breakfast Cookies 🍯🌾

Wholesome, lightly sweet, and wonderfully satisfying. These breakfast cookies are easy to make together and perfect for a slow summer morning. Oats support heart health and provide sustained energy, making this a nourishing activity and treat all in one. ✨

Ingredients
🌾 2 cups rolled oats
🍌 2 ripe bananas, mashed
🍯 3 tbsp honey or maple syrup
🧈 3 tbsp melted butter or coconut oil
🌼 1 tsp vanilla extract
🥄 1/2 tsp cinnamon
🧂 Pinch of salt
🫐 1/2 cup blueberries or raisins (optional)
🌰 1/4 cup chopped walnuts or pecans (optional)

Instructions
✅ Preheat oven to 350°F (175°C) and line a baking sheet
✅ Mash bananas well in a large bowl
✅ Stir in honey, melted butter, vanilla, cinnamon, and salt
✅ Fold in oats until fully combined
✅ Gently mix in blueberries and nuts if using
✅ Scoop rounded tablespoons of mixture onto the baking sheet
✅ Flatten each gently with the back of a spoon
✅ Bake for 12 to 15 minutes until golden at the edges
✅ Allow to cool for 5 minutes before serving
✅ Enjoy warm with a cup of tea or glass of milk 🥛
