What's for dinner? Try our "Peanut Thai Ramen"

Ingredients:
2 packages ramen noodles
2 cups frozen stir-fry vegetables
¼ cup peanut butter
⅓ cup hot water
¼ teaspoon red pepper flakes
1 teaspoon sugar
Directions:

Set ramen seasoning packets aside.
Bring 4 cups of water to a boil. Add noodles and frozen vegetables.
Cook for 3 minutes. Stir occasionally. Drain.
In a medium bowl, whisk together peanut butter, hot water, pepper flakes, and sugar. Add seasoning, if desired.
Add noodles and vegetables to the sauce. Toss.
Add cooked chicken breast or shrimp for added protein.

A Special Thank You to Our Volunteers!

As our 4-H staff head out to clean up the fairgrounds in Grand Island following the conclusion of the 2026 Nebraska State Fair, we want to take a moment to give a very special thank you to the incredible volunteers who make our 4-H program successful!

A special shout-out goes to Don Peterson, who has generously volunteered not only at the county level, but at the state level as well.

Don is pictured with the Champion Rabbit Senior Showmanship award winner, made even more special because this year’s award was won by Haley from our Douglas-Sarpy 4-H program!

Labor Day may mark the start of fall for many, but today's heat makes it feel like summer! Regardless of the temperature, we are going to celebrate a fun fall favorite food: National Acorn Squash Day!

Acorn squash is a winter squash that is harvested when mature, with a hard, inedible skin. It should always be served cooked. When stored properly, acorn squash can keep for up to 3 months.

Plant Now for Beautiful Spring Color

Want a colorful display of spring-flowering bulbs next year? Fall in Nebraska is the perfect time, bulbs should be planted starting in late September, when soil temperatures drop below 60°F.

For the best results, choose firm, healthy bulbs and plant them in a well-drained location that receives full sun. Place bulbs in the ground with the pointed end facing up and at a depth of two to three times the bulb’s height. After planting, water thoroughly to help roots establish before the ground freezes.

4-H teaches our young people so much more than people realize. One example of this is Kyleigh Martin with her award-winning quilt.

Not only did this quilt receive top honors at the Sarpy county fair, but at the Nebraska State Fair, it was one of 22 projects from across the entire state to be highlighted at the Design Gallery.

Her creativity and craftsmanship should be commended! Kyleigh created this quilt using her family’s birth flowers, showcasing how 4-H projects can help kids sharpen their design skills while experimenting with math and geometry. Through quilting, Kyleigh explored shapes, patterns, measurements, and the color wheel, putting math concepts into practice in a creative and hands-on way.

Great job, Kyleigh!
