What is Reheated Rice Syndrome? It’s a type of food poisoning caused by the bacteria Bacillus cereus, which can grow in cooked rice that has been left at room temperature for more than two hours. The bacteria may produce toxins that lead to symptoms such as nausea, vomiting, stomach cramps, and diarrhea, typically lasting less than 24 hours. Because the bacteria can survive the cooking process, the best prevention is to cool and refrigerate cooked rice promptly.
