The new school year has started here at the Newport Area Career & Technical Center Culinary Arts program.

The students have arrived and we are starting to get all our ducks in a row (there won't be any duck on the menu). Every year is like opening a new restaurant. We have 40 new cooks, and 35 older cooks who haven't been in the kitchen for a few months.

Every year we start our senior class with a unit on menu management. The students look at the previous year's base menu sales and what other items were hot sellers. Popular items stay even though they might get a small facelift. Poor sellers go. They then design a new menu with those thoughts in mind. After they develop menu items we start the experimentation process. Sauces, sides, cooking methods are all discussed and sampled. Eventually the students put together a menu they believe will make you excited and challenge them in new ways.

As you can imagine, this process can take some time. We are hoping to be open early to mid October this year. We will keep you updated.
