This month, we're taking a broader look at what an entire meal, specifically breakfast, might have looked like in the late 1800s rather than focusing on a single dish, as we usually do.

The following menu comes from The Whitehouse Cookbook (1913):

*Stewed Peaches
*Fried Mush
*Frogs' Legs Fried
*Tomato Sauce

This week’s featured historic recipe comes from Mrs. Beeton’s Everyday Cookery (1893): Apples Stewed and Custard.

"8 good sized apples, the rind of 1/2 lemon, 1/2 lb of sugar, 3/4 pint of water, 1/2 pint of custard. Pare and take out the cores of the apples without dividing them, and if possible, leave the stalks on; boil the sugar and water together for 10 minutes; then put in the apples with the lemon-rind, and simmer gently until they are tender, taking care not to let them break. Dish them neatly on a glass dish with the stalks upwards, reduce the syrup by boiling it quickly for a few minutes; let it cool a little, then pour it over the apples. Have ready 1/2 pint of custard made by the recipe for Boiled Custard; pour it round, but not over, the apples when they are quite cold, and garnish with a little bright-couloured jelly and some blanched almonds. Time: 20-30 minutes."

I don’t know about you, but this sounds a bit more tempting than pigeon pie for a spring picnic!
