Zucchini is a versatile summer vegetable that's easy to prepare and budget-friendly. This simple Parmesan Roasted Zucchini recipe makes a delicious side dish for lunch or dinner.
Parmesan Roasted Zucchini
Ingredients:
2 medium zucchini, sliced into rounds or half-moons
1 tablespoon olive oil
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions:
Preheat oven to 425°F.
Place zucchini on a baking sheet.
Drizzle with olive oil and toss to coat.
Sprinkle with Parmesan cheese, garlic powder, salt, and pepper.
Roast for 15–20 minutes, or until zucchini is tender and lightly golden.
Serve warm.
