If you've never cooked with garlic scapes, you're missing the best part of garlic season. πΏ These curly green shoots only show up for a few weeks a year, grow exclusively from hard-necked garlic varieties, and produce just one scape per bulb.
They're milder, more versatile, and honestly more fun than a regular clove. When selecting them, look for scapes that are firm, bright green, and free from damage. To store, tuck them unwashed in a bag in the fridge β they'll keep for up to three weeks.
They shine in pesto, stir-fry, eggs, pizza, hummusβ¦and the list just keeps going. Find them at your local farmers' market before they're gone.
