Crispy, golden, and wonderfully satisfying, these Corn and Zucchini Fritters are a late-summer favourite that comes together in under 30 minutes. π½ Packed with fibre, vitamins, and plant-based goodness, they make a nourishing light meal or snack that supports digestive health and sustained energy in older adults.
Ingredients
π½ 2 medium zucchini, coarsely grated
π½ 1 cup corn kernels, fresh or thawed from frozen
π½ 2 large eggs, lightly beaten
π½ 1/2 cup plain flour or chickpea flour
π½ 1/4 cup grated parmesan
π½ 2 spring onions, finely sliced
π½ Salt and pepper to taste
π½ Olive oil for frying
π½ Greek yoghurt or a squeeze of fresh lemon to serve

Place the grated zucchini in a clean cloth or paper towel and squeeze firmly to remove as much moisture as possible.

In a large bowl, combine the zucchini, corn, eggs, flour, parmesan, and spring onions.

Season with salt and pepper and stir until everything is well combined.

Heat a thin layer of olive oil in a non-stick skillet over medium heat.

Drop heaped spoonfuls of the mixture into the pan and flatten each one gently with the back of a spoon.

Cook for 3 to 4 minutes on each side until golden and cooked through.

Transfer to a plate lined with paper towel and repeat with the remaining mixture.
