NDSU Extension - Dickey County NDSU Extension empowers North Dakotans to enhance their lives and livelihoods through research-based education aligned with community priorities.

NDSU Extension has updated two salsa publications with current, research-tested canning recipes. Following a tested recipe is important to ensure your salsa is safe to process in a water-bath canner and enjoy later.

Have a favorite salsa recipe that hasn’t been tested for canning safety? Freeze it instead! Learn more below.

Just in time for tomato harvest! We've updated two of our salsa publications on our website with current canning recipes.

By following research-tested recipes, you can process salsa safely in a water-bath canner for later enjoyment. If your recipe has not been tested to determine its acidity and safety for canning, you can freeze the salsa.

Please submit a drought impact report TODAY if possible, and continue reporting weekly throughout the growing season.

Anyone can report—farmers, ranchers, landowners, homeowners and community members. You do NOT have to work for Extension!

Your firsthand observations help document local conditions and inform the U.S. Drought Monitor.

📊 Include numbers, dates and comparisons whenever possible. Estimates are helpful!

📸 Pictures help, too! Share impacts to your pasture, crops, livestock, water supply, garden, trees or property.

You will be asked for contact information, but it will not be displayed publicly without your permission.
