Glynn County History—Sharing Our Recipes at the Table
A fun way to find common ground with folks is always over a delicious dish! I thought it would be nice to run a series of some of our favorite dishes from local cookbooks and chefs.
Here's another delightful dish from the Frederica Fare Cookbook (1977 edition).
Crab Stuffed Potatoes (page 120)
4 baking potatoes
1 6 1/2 oz. can crabmeat
1/2 c. butter
1/12 c. light cream
1 t. salt
4 t. grated onion
1 c. sharp cheese, grated
1/2 t. paprika
Bake potatoes as usual. When easily pierced with a fork, cut lengthwise and scoop out potato. Whip with butter, cream, salt, pepper, onion and cheese. With a fork, mix in crabmeat and refill shells. Sprinkle with paprika and reheat in hot oven for about 15 minutes. Better if frozen.
