Summer is here, which means you will need quick on-the-go breakfasts ready for you and your family πŸ˜‹
These breakfast cookies are full of whole grains and will give you long lasting energy (especially when paired with a protein source) to get you through busy summer mornings! πŸ’ͺ

Breakfast Cookie Recipe:
-2 1/2 cups oats
-1 tsp cinnamon
-1/2 tsp salt
-1 egg
-1/2 cup peanut butter
-1/2 cup applesauce
-1 tsp vanilla
-1/3 cup honey
-chocolate chips or raisins, to taste

*Mix everything together in a mixing bowl until well combined. Fold in raisins or chocolate chips. Line a pan with parchment paper and spoon cookies onto the sheet pan. Flatten them out a little with a spoon or your hand. Bake the cookies in the oven at 350 degrees for 15 minutes.

Cook together this summer while learning how to reduce food waste in your home! Green Apron is a statewide virtual program through Utah 4-H and Hunger Solutions Institute - NourishSmart.

This series is for youth ages 12-18 who want to participate in a live, virtual cook-along each week for six weeks! Youth will build kitchen confidence while learning creative ways to reduce food waste at home and enjoy cooking a variety of recipes including enchilada casserole, fruit popsicles, and veggie fritters.
