One of the first harvests of the Maine growing season is garlic scapes. Garlic scapes are the edible stalks of hardneck garlic. Harvesting them helps direct growth downward into the garlic bulb. These stalks are like asparagus in texture but with a mild garlic flavor. Try sauteing garlic scapes in a stir fry or blend them into a delicious pesto.

Each month, Oldways Whole Grains Council features a different whole grain. Sorghum is June’s Grain of the Month. Sorghum is native to Australia but is grown in America for livestock feed. An increased demand for plant-based and gluten-free foods has led to more opportunities to grow sorghum for the human food industry.

Sorghum is high in antioxidants and phytochemicals, which have been shown to support cholesterol levels and diabetes. It is also a good source of fiber, magnesium, phosphorus, and vitamin B3 (niacin). Sorghum is a gluten free grain option! Check out the Whole Grains Council website to learn more and to find recipes.

Each month we feature a different whole grain on the Whole Grains Council website, including information on its health benefits, cooking tips and recipes, historical/cultural facts, and more. Click to see the full calendar.
