Trivia: Why You Shouldn't Refrigerate Tomatoes
Did you know? Storing tomatoes in the refrigerator can actually make them taste less! When temperatures drop below 12.5Β°C (54.5Β°F), the fruit slows the production of compounds responsible for its rich aroma and flavor. Cold storage can also damage the tomato's cell structure, leading to a mealy, grainy texture.
π For the best flavor, keep tomatoes on the counter until they're fully ripe. If they're getting overripe, refrigeration can help them last longer, but some taste and texture may be lost.
