Award-winning gastro bar Matt the Thresher Julianstown is celebrating Boyne Valley Dining Week with a dedicated menu spotlighting the very best local land and sea.

Here is a taste of what chef is serving up:

✨ Starters: Pan-seared scallops with Hugh Maguire smoked black pudding and Boyne Valley cauliflower, or roasted beetroot with Boyne Valley Blue cheese, pear, and toasted walnuts.

✨ Mains: Butter-roasted Clogherhead monkfish in a coconut curry broth, slow-braised local lamb shank over smoked mash, or an Elm Grove pumpkin and wild mushroom risotto.

✨ Desserts: Warm apple & blackberry crumble, chocolate raspberry tart, or a showcase cheese plate featuring Boyne Valley Blue with plum chutney.

Every dish features local heroes, including Clogherhead Seafood Co-op, Hugh Maguire Butchers, Hilliard Farm, and Boyne Valley Cheese.
