Luncheon at Cojol'Ya

Luncheon at Cojol'Ya Experience Tz'utujil Maya Culture and Cuisine: We invite your group to share a Tzutujil Festival Meal *For groups of 10 - 18 visitors.

Reservations must be made at least three days in advance.*

Surrounded by beautiful cottage gardens, Cojol'Ya contains the only remaining houses in Santiago Atitlan built in the ancient Tzutujil Maya style. The Krummel property was featured in the August 2002 issue of Architectural Digest “From the Ground Up: An American Activist Honors Tradition in Guatemala.”

ting, you can interact with Tzutujil Maya artisans working with materials they have customarily utilized in their lifestyle, including reed mat making, maguey knit bags, spinning of cotton, cayuco making (the local dug-out canoe), coffee toasting or chocolate processing. Tzutujil elders will be on hand to tell a tale and honor us with their memorable presence. Sample Cojol'Ya’s own pitaya wine, made from the fruit of an exotic epiphytic cactus (Hylocereus undatus), while enjoying the view from the roof terrace and a lively conversation with the owner. Luncheon is a four-course, elegantly served, traditional Tzutujil Maya feast. The main course is accompanied with imported wine and our famous homemade pie is served with herbal tea or coffee grown on the premises. Vegetarian meals may be arranged.

Luncheon with JAN LEDBETTER and Friends / March 19, 2016
We were especially happy to welcome Jan and her husband, Dave, who have brought guests here to share the experience of our Tzutujil festival feast on 8 occasions! And some of the faces you see here appear in other visits as well.....especially their daughter, Amy Havern, who usually accompanies them on their Guatemalan adventures. Plus we welcomed again Wilma and Marc Sharp as well as Linda Haugh, who visited us in 2014.

Semana Santa...time to decorate our home in the Mayan tradition with fruits and flowers, and the sweet scent of a corozal palm blossom.

The first photo shows the hanging of the reeds which are traditionally used to form a curtain over the entrance to the cofradia or an archway over the streets where the traditional processions pass.

The reeds are then laced together to give them stability in the second photo.

In the third photo, Cameron is arranging the reeds to make places for the fruit to be hung....always in pairs.... symbolic of the celebration of fertilization which is the central theme of the ancient Mayan ceremony at this time of year.

Meanwhile, Lucas and his father, Esteven, prepare the fruit for hanging by wrapping it in strands of banana fiber.

Making progress....and the food is being prepared in the outdoor kitchen on the ONIL stove!

The final result...a curiously lovely curtain hanging above the dining table!

An exceptionally fun group of interesting and interested people ...all friends of Jean's in Baja California Sur. What a coincidence that Candis was leaving the next day for Laguna San Ignacio in Baja Sur on a gray whale watching trip with The Orca Network and her sister, Maradel Gale. They enjoyed an additional week's stay in Loreto -- where Catherine and Tom Tyrrell, Candis and her sister, plus more fun friends got together again for dinner.

The recipe you have all been waiting for!
Remember this is a Mayan dish and is prepared by taste not measurement. Good luck inventing the substitute for the wild broccoli! Perhaps a very tender variety of kale???

RECIPE FOR CALDO DE "KULIX"

Ingredients:
1 # skirt steak
1 # potatoes
6 lemons or limes
Salt
Garlic to taste
1 # ripe Italian tomatoes or large can or quart box of Italian tomato sauce
½ red bell pepper
broken rice or corn meal masa
Wild broccoli leaves (1 large bunch)
3 sprigs cilantro

Instructions:
Marinade skirt steak in lemon juice and salt overnight, until all juice has been absorbed.

Sauté cubed steak in a tiny bit of oil with garlic until very lightly browned and liquid has been boiled away.

Add 6 cups of water, diced potatoes, broccoli greens and chopped cilantro. Cook gently until the potatoes are nearly tender.

In a blender, combine the washed, unpeeled tomatoes with ½ of a diced red bell pepper; a small lump (a bit larger than a golf ball) of corn-meal masa or a substitute thickener such as 2 oz. of uncooked, broken rice.

Add this to the soup and heat to boiling, gently stirring and allowing it to thicken slightly but leaving the potatoes intact.

Serve with a hot chili sauce and corn tortillas.
