Burcott Mill

Burcott Mill Historic watermill, producing organic flour and running mill tours. The mill dates back to Domesday times, and the current building from 1753.

Mill open daily for visitors, for flour and bread sales, although mill not always in operation. We use the water power to grind wholemeal flour (Coarse, Fine or Extra Fine), and spelt flour. Regular mill tours are run during summer months and school holidays. From October - June please contact us to arrange a tour.

Great news for local residents - Wookey Post Office have just told us they plan to re-open from this coming Monday 15th June. Usual hours - Mon 10-1.30, Tues 10-1, Thurs 10-1.30. Please be aware it will be a 1 in 1 out system - and if necessary please queue outside at 2 metre distances. Bread (and flour) will continue to be sold from the B&B entrance - using the labelled cones for queuing through the courtyard if necessary.

We now have all our wholemeal and spelt flours back in stock.  We are open Monday-Saturday 10-3.  Max 2 bags per visit, ...

For more than 2 bags, or to order a sack please drop us a message /email/phone with a couple of days notice, and we will prepare the order for you. See you soon!

I've had a couple of requests recently for my Spelt Coffee and Walnut sponge recipe ….so here goes....

SPELT COFFEE AND WALNUT CAKE (large)

Ingredients
12 oz butter or cooking margarine (room temperature)
12 oz caster sugar
6 large eggs
12oz Burcott Mill Spelt wholemeal flour
3 tsp baking powder
2 tbsp. coffee essence
Butter
Icing Sugar
Coffee Essence
Walnut pieces to decorate.

Method:
Cream the butter and sugar together until smooth.
Add the eggs and mix, then the coffee essence.
Sift the spelt flour with the baking powder to add lift, tip any remaining bran left in the sieve in.
Divide between 2 tins sized 7.5" (ideally silicon non stick)
Cook for 30-35 mins at 180 degrees C, or 170 for fan ovens.
Check it is cooked by lightly pressing, should spring back. Use a skewer to check middle is cooked - should come out clean.
Turn onto a wire grid to cool.
Make coffee butter icing and decorate with walnut pieces.

Finally got around to trying out my soda bread recipe - went quite well, the loaf is a little heavy but tasted great with lashings of butter! Next time I think I'll add a little less liquid as the dough was so sticky that I nearly baked my ring in the loaf as I hadn't realised it had come off my finger!

WE NEED YOUR HELP! As most of you know, Steve bakes every morning except Sunday, and many local people are big fans of his wholemeal and spelt breads. Sadly we will have to stop baking soon, unless we can find a supply of the FAST ACTING DRIED YEAST that we need. If anyone local is in a supermarket/shop and spots some of the right kind, please buy for us and we will pay you back. We really don't want to disappoint our regular bread buyers. Thanks in advance for your help (it must be fast acting dried yeast) x

We received a tonne of grain yesterday - busy milling day. We now have 1.5kg bags of coarse, fine and extra fine wholemeal flour. Max 2 bags per visit to ensure we have enough daily stock for everyone. If you want a larger sack or several bags give us a call or email [email protected], and we can help you with a special order. We are open Mon-Sat 10-3pm

We are out of stock of flour today, and waiting for a grain delivery. We should be back on track with our wholemeal flour and spelt flour early next week....will keep you informed.

Nearly everyone visiting us for flour has been following our social distancing signs - thank you. If we ask you to stand in a certain place, or to step back - we don't mean to be bossy we just want to keep our customers and ourselves safe. We have had a couple of customers today being extremely rude to us - thank goodness they are in the minority. Thank you all for supporting our little mill at this challenging time.
