Coffee Growth Report:

Very happy to report that our fruit is growing strong and healthy. The harvest is going to be slightly smaller than last seasons but they'll still be plenty of coffee to go around.

It is an interesting fact that when the number of coffee cherries goes down, the size and strength goes up because the tree has more energy to spread.

These cherries are going to continue to get strong and will start to turn yellow in November. Six weeks later, they will turn red we'll be harvesting coffee. We'll keep you posted.

UPDATE ON MY HEALTH:

Hello, friends. Sorry for not keeping you updated lately. As you might remember in March I had a stent placed in my bile way to clear it.
Unfortunately the stent clogged and that caused an infection so I went into the hospital on July 21st to repair the stent but the procedure failed. After that, I had one more procedure to explore for a solution and two additional procedures, the last of which was succesful . So now my bile empties into a bag.

At the same time while I was in the hospital I was diagnosted with low calcium and an disbalanced in my electrolyte which gave me a seizure. So, all in all I spent 20 days in the hospital, and as some of you might know hospital food and me are not friends. This is my third day home so I'm taking my time to adjust. The infection is gone and I am back to good levels of calcium and electrolytes.

How do you say Cool in the Summer? Iced Latte

Simply use two shots of espresso made with our Medium Roast for a smooth like silk taste. If you want a more intense taste you can always use our Dark Roast to prepare the espressos.

If you dont have a espresso machine you can always prepare a regular drip brew using 50% more coffee grounds with the same amount of water.

While the coffee is still hot pour it slowly over the ice cubes of a 16 oz glass of cold skim milk and cinammon. Enjoy!

We want to share the industrial, "unromantic" side of coffee processing.

After it reaches 10.5% moisture content in our sundrying beds, the coffee bean separates from a husk that covers it. It can rest with that husk for months and de-husked as needed.

The equipment for this process is very sophisticated, using densitometric and infrared/optical technology so we dont own any of it. There are very few facilities in the country and they service the entire industry.

We just processed the first 8,000 lbs from our 2021 harvest that ended in March and I am happy to report that the quality is as good as ever.

The video shows an Oliver sorter working by density/weight. It is tilted and the motion pushes the heavier beans to the right, leaving the lower quality beans that are lighter on the top. Here you also get a good idea of what percentage of first quality beans are in my production compared to the lighter/lower quality rejects.
