Add the following to a large pot:
- Leftover turkey carcass and bones
- 1 onion, roughly chopped
- 2 carrots, roughly chopped
- 3 celery stalks, roughly chopped
- 5 garlic cloves, or garlic powder
- 2 bay leaves, if available
- 10 Black peppercorns or 1.5 tsp ground black pepper
- Dried rosemary, thyme and sage, or 2 tablespoons of poultry seasoning
- Enough water to cover the bones
Feel free to add any extra vegetables or herbs you have on hand.
Bring to a boil, then reduce the heat and gently simmer for about 4 hours. Add more water as needed to keep the bones covered.
Strain the stock, discarding the bones and cooked vegetables. Pick off any remaining meat from the bones and set it aside.
𝗧𝘂𝗿𝗻 𝘁𝗵𝗲 𝗦𝘁𝗼𝗰𝗸 𝗶𝗻𝘁𝗼 𝗦𝗼𝘂𝗽
Return the stock to the pot and add whatever you have available, such as:
- Fresh onion, carrots and celery
- Fresh garlic or powdered
- Shredded turkey
- Potatoes, rice, noodles or barley
- Leftover vegetables, such as corn or peas
- Beans
- Leftover gravy
- Salt and pepper, to taste
Simmer until the vegetables and starch are tender. Add the shredded turkey near the end so it stays moist and tender.
Taste and adjust the seasoning. That’s it! One turkey carcass can stretch into several meals, making this a delicious and affordable way to use what you already have.
