Complaints about food safety and food businesses involve a lot of details and Facebook is not the best place for this. A Gloucester bakery has been convicted of 24 food safety-related offences and its director convicted of a further 8 in Gloucester Local Court.
The offences, which occurred over 4 dates in 2024 and 2025, relate to inadequate cleaning, pest control, failing to maintain the premises and fixtures fittings and equipment in a good state of repair and failing to protect food from contamination.

Food businesses use the 2-hour / 4-hour rule to help keep food safe, and you can too.
This rule sets how long ‘potentially hazardous food’ can safely sit in the temperature danger zone (5°C - 60°C), where bacteria can grow quickly.
Potentially hazardous food means it needs to be kept hot or cold to stay safe to eat.

If food has been out of the fridge for…
- less than 2 hours: eat or use it, or put it back in the fridge for later
- 2–4 hours: eat or use it, but don’t put it back in the fridge
- more than 4 hours: throw it out – bacteria may have grown to unsafe levels.
Simple steps can help prevent food poisoning and keep your household safe.

Cooking in bulk saves time, money and reduces waste but those benefits can quickly go to waste.
Safe food handling is key to reducing your risk of food poisoning and getting the most out of your efforts!
- Make sure food reaches at least 60°C in the centre.
- Slow cookers must keep food at 60°C or more until serving.
- Once cooked, divide into small portions for faster cooling.
- Once steaming stops, refrigerate at less than 5°C or freeze.
- Use refrigerated leftovers within 2-3 days – labelling with a date helps you keep track.

An allergic reaction can happen fast. Knowing what to do can save a life.
Signs of a severe allergic reaction (anaphylaxis) include:
- difficult or noisy breathing
- swelling of the tongue
- swelling or tightness in throat
- wheeze or persistent cough
- difficulty talking or hoarse voice
- dizziness or collapse
- pale and floppy (young children).
