Preserving plantain Bananas :

Preserving plantain curried plantain bananas in recycled glass mason jars .
I used the hot water bath process combined with the process of tyndallization as I am not comfortable using the pressurised canning process .
So I combined the Amish hot water process and Tyndallization process to cooked them in slow boiling process for 2 hours on the first day and repeating it within 24-48 hours for another 2 hours , checking for a good seal . I had to do it over two days as I did not acidify the the curry , so the simple hot water bath process would not be adequate , though the Amish people tend to think a good 3 hours of boiling is sufficient , but I wanted to be safe , I have already used my method in meats and so far have had no issues as we know meats generally run the risk of botulism which is a serious food poisoning due to Clostridium botulinum growth in anerobic conditions .
I feel that a perfectly sealed jar cooked for prolonged hours eventually build up a good amount of pressure inside the can because often the jar lids can pop open or get distorted in the boiling process similar to that of a pressure cooker or a pressure canner . Once the pot comes to a boiling I do lower the heat and maintain a gentle diner with the lid of the stock pot covered . So far so good Halleluyah! Hosanna !
