Why is our honey runnier than supermarket honey? 🍯
A few people have asked, so we did a little digging. We only harvest frames that are 100% capped, and our honey tested at 14% moisture — exceptionally dry and fully ripe - and well below the “premium honey ” threshold of 17%
The difference is the flowers.
Our hives sit on a 120-acre nature refuge surrounded by diverse native plants and eucalyptus, with no nearby monoculture crops like canola or sunflower. Native nectar is naturally higher in fructose, which means the honey stays liquid and runny for much longer, even when very dry.
Supermarket honey, by comparison, is usually:
• Blended from many sources
• From high-glucose crops that crystallise quickly
• Heat-treated and filtered for a thick, uniform texture
Our honey is light, floral and smooth, without the strong eucalyptus punch — a reflection of the diversity our bees forage from.
