Tahini Spiced Aussie Walnuts with Comté & Honeycomb 🍯⁠
⁠
The sweet heat from the walnuts with the nutty cheese and sticky honeycomb makes for the ultimate flavour combination⁠
⁠
Ingredients ⁠
2 1/2 cups Aussie walnuts⁠
4 tablespoons brown sugar⁠
2 tablespoons tahini ⁠
2 tablespoons olive oil⁠
1/2 teaspoon whole cumin seeds, crushed in mortar and pestle ⁠
1 teaspoon whole coriander seeds, crushed in a mortar and pestle⁠
1 teaspoon Aleppo pepper⁠
1/2 teaspoon salt⁠
fresh thyme sprigs ⁠
200g Comte cheese⁠
fresh honeycomb ⁠
fresh bread or crackers to serve⁠
⁠
Instructions⁠
1. Preheat the oven to 180°C. Line a baking tray with baking paper. ⁠
2. Stir the walnuts, brown sugar, tahini, olive oil, spices and salt together in a bowl until evenly coated.⁠
3. Transfer to baking tray and roast for about 10 minutes until fragrant and golden. ⁠
4. Leave to cool, then plate up with Comte, honeycomb and toasted bread or your choice of cheeseboard additions.

Last day of Harvest !! Fog didn’t lift until after lunch and kookaburra’s are waiting to do clean up !
Please be patient - they are in the driers, and still need to be graded and bagged - they will be ready soon !!
