While taking in the diverse activities available at the Australian Sheep & Wool Show, enjoy the chance to have a rest and regroup. What better way than having a quiet beer at one of the Grand Ridge Brewery sites to be found at the show grounds.

Things lamb are shaping up nicely for the Bendigo Festival of Lamb as part of the Australian Sheep & Wool Show. A new feature this year will be our sampling station between 12 and 2pm daily. You can taste some wonderful lamb dishes, as well as take in a series of chef demonstrations each day.

An ideal cooking vessel for lamb is the tagine. Not only does it capture all the flavours of a great slow cooked dish, but it's an ideal serving dish as well. They can be plain terracotta, which is usually the best for slow cooking, or highly decorative and a great addition to the table.Like most slow-cooking methods, getting a tagine together is easy and needs little work. The cooking vessel will do it all while you get on with other things. The terracotta versions do need some seasoning before use and this involves soaking it in water for 24 hours. The trick is not to subject it to high or extreme temperature changes. Lightly cooking base ingredients such as onion or garlic and spices, adding your lamb and liquid and then covering with the conical lid on a very low temperature will wow family and friends.That special lid will circulate the aromatic steam, so it drips back onto the lamb, so no need to keep adding liquid. If the seasoning idea doesn't appeal, there are plenty of versions in stainless steel or glazed ceramic.

If a philosophy of forming close relationships with the best primary producers and translating that excellence onto a top restaurant plate appeals, then Festival Of Lamb fans will be delighted to know that Nick and Sonia Mason will again be at your service. Their restaurant, Masons of Bendigo, at 25 Queen Street, has taken the old WD Masons Glass shop - once the oldest family run business in Australia - and turned it into a modern celebration of exceptional Central Victoria produce. French and English food styles feature on Mason's menus from Nick's experiences in London and Melbourne, while Asian flavours have evolved from his time with Teage Ezard @ Ezards and as Executive Sous Chef at the Ritz Carlton Millenia in Singapore. Best known as the roller derby-loving, larger-than-life social worker from MasterChef 2012, Tregan shares her passion for food not only with the public, but in some phenomenal work she does in the social welfare sector. Her MasterChef highlights were preparing food for Jamie Oliver, cooking Italian antipasti for Jamie Oliver, winning the “dude food” challenge and also winning the Rick Stein world food challenge. Tregan has gone on to gain commercial cooking experience at two-hatted Maha restaurant under Shane Delia. and has worked for Jamie Oliver’s Ministry of Food, in Geelong.
