The weeds worth eating!

Our organic pastures are a haven for dandelions, and humans love the greens as much as the cows!

Dandelion greens are among the most nutrient-dense leafy vegetables you can eat- richer in vitamins A, C, and K than spinach, and loaded with calcium, iron, and potassium. They’re also a good source of antioxidants and have been used for centuries in traditional medicine to support liver and digestive health

They taste like a more assertive arugula, and the bitterness can be take out with a quick blanch before sautéing or braising them. Mike’s grandmother used to salt them to preserve them and eat them all winter. A true Maine dish.

We aren’t salting a huge crop but these will make a delicious healthy side for dinner!
