One of my favorite ways to serve sweetpotatoes for the holidays!

Sweet Potato Scoops-
Serves 12–15

Ingredients:

8 medium sweetpotatoes
2 tablespoons olive oil or softened/melted butter
12–15 pineapple rings-from pineapple in juice-NOT syrup.
1/4 pineapple juice from can
1/3 cup brown sugar
1 tsp. cinnamon

Method:
Preheat the oven to 350˚F / 180˚C.

Drain the pineapple and reserve 1/4 cup of juice. Bake the sweet potatoes until they are soft. Mash them with the butter or oil, cinnamon and the 1/3 cup sugar. Drizzle in the pineapple juice until potatoes are the right consistency to hold shape when scooped. Lay out the pineapple rings on a baking tray lined with baking paper or lightly oiled baking pan. Scoop the sweet potato mixture with an ice cream scooper and place each scoop on top of a pineapple ring. Bake, uncovered, for 30 minutes or until the sweet potato mixture is warmed through.

TIP:

For added garnish, top each scoop with a Maraschino cherry, mini marshmallow or dried cranberry or cherry. Also, a sprinkling of toasted and chopped nuts is delicious also!
