DeJoux House Huguenot Stone House Built in 1755 DeJoux house (pronounced De-yo) is a private home on Springtown Road, New Paltz, NY. Pritchard 2002).

It is a rare example of early Dutch building techniques. This house was built by Christoffel Deyo and his brother Benjamin in around 1755 on a site selected by the Sachem of the Warrawongkong Munsee (Source Native New Yorkers, Evan T. A great addition to DeJoux. Hand made table for our dining room by Don Howell (link in comments). The ‘trestle’ design is based on the Springtown road bridge (of The Quiet Place movie fame). Red Oak. 11ft long. A legacy piece that will be in the room it was designed for, forever.

A strange, new DeJoux House breakfast today. Since working with Quaker I've wanted to create a savory oatmeal breakfast. Rather pleased with this first effort. "Bacon, egg and cheese porridge". I fried bacon bits until crispy, added small diced red onion and browned. Added rolled oats and toasted until it had a nutty fragrance then added milk/water mix. I had flax seeds and toasted pine nuts so added a few of them too...salt and pepper then when oatmeal was nearly cooked I stirred in some gruyere cheese and kept warm in Aga's coolest oven (it can stay there warm for a while). I cut up tomato, avocado, spring onion/scallion. Then as people got up I fried 2 eggs. Put porridge in bowl with tomato, avocado and scallions on top. sprinkled with red pepper flakes, pinch flax seed, drizzle olive oil. Eggs in top. Delish.
