🍗 Herb Roasted Chicken

Ingredients
• 1 whole chicken (about 4–5 lbs)
• 2 tbsp olive oil or melted butter
• 4 garlic cloves, minced
• 1 lemon, halved
• 1 onion, quartered
• Fresh herbs (rosemary, thyme, parsley)
• 2 tsp salt
• 1 tsp black pepper
• 1 tsp paprika

Instructions
1. Preheat oven to 425°F (220°C).
2. Pat chicken dry with paper towels. Rub with olive oil or butter.
3. Season generously inside and out with salt, pepper, and paprika.
4. Stuff cavity with lemon halves, onion, and fresh herbs.
5. Place in roasting pan. Tuck wings under and tie legs with kitchen twine.
6. Roast for 1 hr 15 min–1 hr 30 min (or until internal temp reaches 165°F in the thickest part of the thigh).
7. Let rest 10 minutes before carving.

🧁 Pumpkin Cream Cheese Muffins

Ingredients
Pumpkin Batter:
• 1 ¾ cups all-purpose flour
• 1 cup pumpkin purée
• 1 cup sugar
• ½ cup vegetable oil
• 2 large eggs
• 1 tsp baking soda
• ½ tsp baking powder
• 2 tsp pumpkin pie spice
• ½ tsp salt

Cream Cheese Filling:
• 8 oz cream cheese, softened
• ¼ cup sugar
• 1 tsp vanilla extract

Topping (optional):
• ½ cup chopped pecans or walnuts
• Sprinkle of cinnamon sugar



Instructions
1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
2. In a bowl, whisk flour, baking soda, baking powder, pumpkin pie spice, and salt.
3. In another bowl, whisk pumpkin, sugar, oil, and eggs until smooth. Stir in dry ingredients.
4. In a small bowl, beat cream cheese, sugar, and vanilla until creamy.
5. Fill each muffin cup ⅔ full with pumpkin batter. Add 1 tbsp of cream cheese mixture in the center and swirl slightly.
6. Sprinkle with nuts or cinnamon sugar if desired.
7. Bake 18–22 minutes, until a toothpick inserted near the edge comes out clean. Cool before serving.

🍎 Classic Caramel Apples

Ingredients:
• 6 small apples (Granny Smith or Honeycrisp work best)
• 1 (14 oz) bag of soft caramels (about 50)
• 2 tbsp heavy cream
• Wooden sticks (popsicle or craft sticks)
• Optional toppings: chopped nuts, sprinkles, crushed cookies, mini chocolate chips

Instructions:
1. Wash and dry apples completely (any wax will keep caramel from sticking). Insert sticks into the top of each apple.
2. In a saucepan over medium-low heat, melt caramels with cream, stirring until smooth.
3. Dip each apple into caramel, twirling to coat evenly. Let excess drip off.
4. Roll in toppings if desired.
5. Place on a parchment-lined tray to set, about 20–30 minutes

✨🍪 Nutmeg Kissed Chocolate Chip Cookies 🍪✨

I finally perfected my chocolate chip cookie recipe… and this time, I added a little something special: a teaspoon of nutmeg 🌿💫

The result? Gooey centers, golden crispy edges, melty chocolate, and a warm spiced hug in every bite. 🧡

Here’s the recipe (makes 9–10 cookies):

Ingredients
• ½ cup (115g) unsalted butter, melted & cooled
• ½ cup (100g) light brown sugar
• ⅓ cup (67g) granulated sugar
• 1 large egg, room temp
• 1 tbsp (15g) vanilla extract
• 1 ¼ cups (160g) all-purpose flour
• ½ tsp (2g) baking soda
• Pinch of salt
• 1 tsp nutmeg ✨
• 1 ½ cups (190g) semi-sweet chocolate chips

Method
1. Preheat oven to 350°F (180°C) & line a baking sheet.
2. Whisk flour, baking soda, salt & nutmeg.
3. In another bowl, mix melted butter, brown sugar & white sugar until smooth.
4. Add egg & vanilla, whisk until combined.
5. Fold in dry ingredients gently.
6. Stir in chocolate chips.
7. Scoop 9 cookies onto sheet, leaving 2 inches between.
8. Bake 12 mins (golden edges, gooey centers).
9. Sprinkle flaky sea salt while warm.

✨ Enjoy warm with a glass of milk or a cozy latte.
