Oat-Crusted Halloumi with Poached Plums & Hot Honey

🍽️ Serves 2

Ingredients

For the Oat Crusted Halloumi:

* 250g halloumi cheese
* 40g plain flour
* ½ tsp salt
* 60g Flahavan’s Quick Oats (lightly blitzed)
* 1 tsp paprika
* ¼ tsp garlic powder
* 1 egg, beaten
* Pinch of salt
* 3 tbsp sunflower oil
* 2 tsp hot honey
* 8 sage leaves

For the Poached Plums:

* 2 plums, stoned and sliced
* Juice of 1 orange
* 1 tsp honey

Method 👩‍🍳

1. Slice the halloumi and place in a shallow dish.

2. Mix the flour, salt, paprika and garlic powder. Coat the halloumi in the seasoned flour, followed by the beaten egg and finally the oats.

3. Gently poach the plums in orange juice and honey over a medium heat for 5 minutes.

4. Heat the sunflower oil in a frying pan over a medium heat. Fry the halloumi on both sides until golden and crispy.

5. Clean the pan, add a little oil and fry the sage leaves until crispy.

6. Serve warm with the poached plums, a drizzle of hot honey and crispy sage leaves. Enjoy! 😋

🌶️ Make your own hot honey: Gently heat 100ml honey with 1 tsp chilli flakes over a low heat for 2–3 minutes. Allow to cool before stirring in ½ tsp apple c***r vinegar.

Creamy Porridge with Lemon Curd 🥣🍋

For a sunny twist on a comforting classic, swirl lemon curd through creamy Flahavan’s porridge. Its bright citrus flavour brings a little zing to every spoonful, making this a breakfast that feels like a treat!

Serves 3

Porridge Ingredients
• 100 g Flahavans Rolled Oats
• 300 ml Whole Milk
• 150 ml Water
• Pinch of Salt
• 1 tsp (5g) Butter

Lemon curd
• 100g butter
• 220g caster sugar
• Finely grated zest and juice of 4 lemons - if you can find unwaxed lemons,all the better
• 4 eggs and additional 2 yolks

Method

1. To make the Lemon Curd: On a very low heat melt the butter, add the sugar, lemon rind, lemon juice and sugar and stir in the well-beaten eggs.(Contrary to most recipes where lemon curd is stirred using a wooden spoon, I prefer to use a whisk as I feel it add lightness to the curd).
2. Stir with a whisk from time to time until the butter has completely melted. Let the curd cook, stirring regularly, for about 10 minutes, until it is thick and custard-like. It should feel heavy on the whisk.
3. Remove from the heat and stir occasionally as it cools. Pour into spotlessly clean jars and seal. It will keep for a couple of weeks in the fridge.
4. To make the Creamy Porridge - Put the rolled oats, milk, water and salt into a saucepan.
- Cook gently for 5 to 7 minutes, stirring frequently, until thick and creamy.
- Remove from the heat and stir through the butter until melted.
5. Swirl the lemon curd through the hot porridge.

Happy National Porridge Week! 🥣✨

To celebrate, we have some gorgeous recipes from our National Porridge Week ambassador, Eunice Power, to share with you. Stay tuned for more delicious porridge inspiration throughout the week!

First up is Eunice’s Hot Porridge with Cranberry, Apple & Orange Compote 🍎🍊

Bring a little early festive colour to the breakfast table with a steaming bowl of creamy Flahavan’s porridge topped with cranberry, apple and orange compote. Sweet, tart and gently citrusy, it’s a lovely way to brighten the cooler mornings ahead.

Serves 2

Porridge Ingredients:
• 100g Flahavan’s Rolled Oats
• 300ml Flahavan’s Vitamin Rich Oat Drink
• 150ml water
• 1 crisp apple, coarsely grated
• 40g dried cranberries
• Zest of ½ orange
• 2–3 tbsp fresh orange juice
• 1–2 tsp honey, to taste
• 1 tsp (5g) butter
• Pinch of salt
• ½ tsp cinnamon
• ½ tsp ground ginger
• Pinch of nutmeg
• 2 tbsp chopped walnuts or pecans

Apple & Cranberry Compote:
• 250g apple, peeled, cored and chopped
• 100g frozen cranberries
• Juice of 1 orange (roughly 60–80ml)
• 20–25g sugar (about 1½–2 tbsp)
• 2–3 tbsp water
• Optional: a small pinch of cinnamon

Method

1. To make the compote, add the apple, cranberries, orange juice, 20g sugar and 2 tbsp of water to a small saucepan.
2. Bring gently to a simmer, cover and cook over a low-medium heat for 12–15 minutes, stirring occasionally, until the apple is completely soft and the cranberries have burst.
3. Taste and adjust the sweetness with additional sugar if needed.
4. Remove from the heat, allow to cool for a few minutes, then blitz until smooth using a stick blender. If it’s thicker than you’d like, blitz in an extra tablespoon or two of water or orange juice.
5. Once cooled, refrigerate until needed.
6. To make the porridge, add the rolled oats, oat drink, water, grated apple, dried cranberries, cinnamon, ginger, nutmeg and salt to a saucepan.
7. Cook gently for 5–7 minutes, stirring frequently, until thick and creamy.
8. Add the orange zest and juice and cook for another 30–60 seconds.
9. Remove from the heat and stir through the butter and honey until melted.
10. Swirl the compote through the hot porridge, sprinkle with the chopped walnuts or pecans.

Enjoy!
