It’s Day 8 of - ‘Low and Slow’

Our favourite low and slow cut - IDevour Flatiron Topblade 🔥

◼️ 24hr dry brine (50/50 salt/pepper)
◼️ Cherry smoked until 175f internal
◼️ Wrapped in butchers paper
◼️ Returned to smoker until 207f internal
◼️ Held overnight at 60°C in oven

It’s Day 7 of UK BBQ WEEK - ‘Fakeaway Friday’

Today we collaborated with the incredible The Sphinx Kebab House - Glengormley and used their famous secret sauce - everyone in Northern Ireland loves this place!

Beef cheeks seasoned with salt, black pepper, paprika, cumin, garlic powder, onion powder, oregano, chilli flakes and cinnamon. Smoked with cherry chunks at 225f for 4hrs then finished in salted butter until 205f internal. Confit for 12hrs in a holding oven at 60°C. Served on chippy chips with loads of this banging sauce - beaut ❤️🔥

It’s Day 6 of UK BBQ WEEK - ‘Thrifty Thursday’

We’re being thrifty on a Thursday without compromising flavour or quality. These incredible double smash burgers with cheese, lettuce, sauce and baps only cost £3.15/burger to make 🔥

Searing hot plancha over charcoal, seasoned with IDevour tallow, 90g balls of our ‘Ultimate Smash Burger Mince’ smashed thin, seasoned, flipped when crispy, American cheese added, double stacked, toasted baps and dangling sleeves 😂. Pure beaut and fed most of the neighbours!

It’s Day 5 of UK BBQ WEEK - ‘World Food’

Remember the beautiful chunks of chuck we smoked yesterday? Well, we did far too many so the extra got braised into this beautiful madras curry. Smokey, spicy hot, delicious 🔥🔥🔥

Beef chuck smoked over oak at 225f for 2.5hrs. Braised with onions, garlic, tinned tomatoes, beef stock and Pataks madras curry paste for an additional 3hrs(ish). Served with jasmine rice, mango chutney, riata and popadoms.

It’s Day 4 of UK BBQ WEEK - ‘Tarts, Pies and Pastry’

Today, Shepherds Pie blended with Hungarian Goulash. It was smokey, sweet, spicy and delicious 🔥🔥🔥

Slow smoked beef chuck chunks for 2.5hrs over oak for colour as flavour. Combined with onions, peppers, garlic, paprika, hot paprika paste, tomatoes, stock and wine - slowly braised and topped with buttery mash before a final roast.

Would definitely make this again ❤️
