These lovely delicious cupcakes are heading to The Great MS Puzzle Race to help support those living with MS. It’s such a neat fundraiser! My families two favourite Christmas treats that I make every year. Shepherd and I are selling this at Bayside Camp and Retreat Centre Christmas At The Cove craft market. We will also have chip clusters, chocolate peppermint dippers for your coffee or hot milk, and maybe one more treat depending on how productive we are the rest of the day. Tonight I helped Shepherd make mini chocolate cupcakes for his school’s canteen at their Halloween party. This is the easiest recipe for a cupcake I’ve come across. No mixer required. No eggs or milk or butter. It’s actually called “Crazy Cake”.

Posting the recipe in case you want to try it out. By the way, this is a cake recipe. But did you know any cake recipe can be made into cupcakes? I don’t make this recipe in a pan since I make it into cupcakes. I put all the ingredients in one bowl mix and then put in cupcake pans. Back for 8-10 min for mini cupcake or 12-14 min for regular sized cupcakes. You’ll see what I mean when you read the recipe.

Sorry I don't have one of those fancy recipe blogs since I write about other things... and yes, it's been a while since I did anything with my blog. I thought about writing a post on them while I was making rhubarb muffins and hey, it turns out I already did way back in 2012! I made some minor updates to the post.

I may never have to go to Starbucks for a fancy drink again - or at least not for a Crème Brûlée iced cold brew. You can try it at home too.

For cold brew:
☕️ Coarsely grind coffee and place in cold or room temp water and let sit on the counter for about 12 hours.
☕️ Use more coffee if you want to make a concentrate. I read about 1c ground coffee to 4c of water. I did 1 1/2 c in my tea pitcher (not sure how much that is).

For Crème Brûlée Coffee Creamer:
☕️ 1 can of evaporated milk
☕️ 1/2 C light brown sugar
☕️ 1 1/2 C whole milk (or whatever % you have)
☕️ 2 tsp vanilla

- warm evaporated milk and brown sugar until the sugar is melted.
- take off stove and add milk and vanilla
- put in mason jar or other container and store in fridge
- lasts for as long as milk expectation date

Yesterday I made hot chocolate bombs using Dixie cups. I saw it on Instagram and I have been wanting to try it for a while. My friend Debbie helped (thanks Debbie!).

Eli wanted to try but couldn’t wait and had his white milk instead. Plus I put the chocolate bomb in my coffee and he’s not quite ready for that yet! 😜

Also welcome to Baby Eli if you follow this page but not my personal page. I’ve been a little busy the last couple months so I haven’t been doing much baking or posting on this page. What a cute background for really anything.

The Candy Cane Hot Chocolate Fudge pictured uses two recipes = Candy Cane Fudge and Old Fashioned Chocolate Fudge.

How to make Candy Cane Hot Chocolate Fudge:
- Make a batch of the old fashioned chocolate fudge as directed.
- Set in fridge to cool while you make the candy cane fudge.
- Make the candy can fudge (I only used half of the recipe, so you would have a thicker layer if you used the full recipe).
- Pour candy cane fudge on top of the old fashioned chocolate fudge instead of in a new prepared pan. Let set in the fridge for 2 to 3 hours or overnight to set.
- Cut and serve.
- Store fudge in an air tight container in the fridge or freeze for later.

Old Fashioned Chocolate Fudge Recipe

Ingredients:
2 C white sugar
1/2 C Cocoa powder
1 C milk (*I used eggnog)
4 tbsp of butter
1 tsp vanilla extract

- Line 8x8 pan with parchment paper or grease well
- Combine sugar, cocoa, choice of milk into a medium saucepan. Stir to blend and bring to a boil. Stir constantly during this step.
- Reduce heat and let simmer. Do not stir again.
- Using a candy thermometer heat until 238f (114c). If you don't have a candy thermometer use a cup of cold water until a small drop of fudge forms into a soft ball. Be sure to feel with fingers. It should flatten when pressed between fingers.
- Remove from heat. Add butter and vanilla extract. Beat with a wooden spoon until no sheen, don't under beat (the hardest part of the recipe). Poor into pan and let set in the fridge for 2 - 3 hours.

Notes:
-It takes a while to get it up to the proper temp. for fudge.
-I used Markus' arm power for beating it in the pot - we took turns. I think this makes it the "old fashioned" part.
-You can substitute the milk for another type of milk that has a thick consistency like regular milk or eggnog. Almond milk would probably work and have a nice taste.
-You can switch the extract flavour - peppermint is yummy.
-I used vanilla extract for the above fudge so it wouldn't be overwhelming with peppermint.

Candy Cane Fudge Recipe

Ingredients:
12 oz White Chocolate Chips
14 oz Sweetened condensed milk
1 tsp peppermint extract
1 1/2 C crushed candy canes

- Line baking sheet or 8x8 dish with parchment paper
- Place candy canes into plastic bag and crush with rolling pin or make it easy on yourself and use a food processor
- In medium sized pan over low heat melt the white chocolate chips with sweetened condensed milk until almost all melted. The few choc. chips that don't melt will when you stir after taking off stove. Stir frequently.
- Remove from heat and stir in peppermint extract and 1 cup of chopped candy canes
- Immediately pour into prepared dish
- Sprinkle remaining 1/2 c crushed candy canes on top of the fudge and gently press into fudge
- Refrigerate until set for 2 - 3 hours, cut and Serve

Notes:
- I used 1/8 tsp of peppermint oil safe for baking instead of extract
- I halved the recipe for this fudge as I had just enough white chocolate chips to make a half batch.

Winning treat at the church Christmas Bake-off. Thanks for the votes everyone! It’s an honour to win. I call this Candy Cane Hot Chocolate Fudge. The bottom layer is old fashioned chocolate fudge made with eggnog instead of milk. The top layer is candy cane fudge - which was a new recipe for me. It’s delicious! I wasn’t sure how it would do as kids got to vote first and they aren’t always peppermint fans - but I figured the adults would like it. Turns out it was liked all around.

One of my favourite cupcakes - pumpkin spiced with cream cheese and chocolate buttercream swirl frosting. I made these for Stevens Road Baptist’s 67th Anniversary Today.

And who doesn’t like mini cupcakes - just the right size if you just want a taste or for those who want to say I ate 4 cupcakes and feel good about it cause that equals to about 1 normal size cupcake! No one has to know they were minis. 😉🧁
